Barbeque
Boss Hawgs meats will show a strong pink-to-red coloration
called a smoke ring. This is due to being cooked
in the time-honored fashion: over a hardwood fire. A smoke ring
is also sought by barbeque judges as proof of authentic barbeque.
The smoke ring is not an indication of undercooking as the barbeque
spends many hours in the smoker and finishes at a well-done
temperature of 165-200 degrees, depending upon the type of meat.
Our meat is smoked properly, and therefore will be moist on
the inside. If you are bothered by moist meat or the appearance
of a smoke ring, please let your server know prior to ordering
so they can help with appropriate menu selections. There are
bones in authentic barbeque! We cook from scratch; because we
start with whole roasts, whole turkeys, and whole chickens,
there may be small bones in any of the meats that we serve.
